8oz Neufchatel Cream Cheese4 oz shredded mozarella cheese4 oz sour cream1 package frozen chopped spinach6 large eggs10 oz cooked diced ham
First, soften cream cheese in microwave. Next blend the cream cheese and sour cream with an electric mixer until smooth. Drain defrosted spinach to remove all excess water. Then layer all the ingredients in the following order into a pie plate: diced ham, spinach, shredded mozzarella, cream cheese and sour cream mixture, and finally the beaten eggs on top. Bake in oven at 400 degrees for 45 minutes. Let sit for about 15 minutes before cutting to allow time for the cheese to set.
