Popovers - Whole Wheat

egg white, fresh, 2 large Egg, fresh, 2 largeskim milk 1.25 cupWhole Wheat Flour, 0.5 cup Flour, white, .75 cupSalt, 1 dash
It helps to have all ingredients at room temperature.
Using a very light touch..mix eggs and egg whites.
Mix in milk
Stir in flours. Do not over mix, some lumps are ok.
Let mixture sit and rest for 10 minutes or longer.
Meanwhile double grease popover pan (or muffin tin). (Butter then spray oil)
Fill cups 1/2 to 3/4 full.
Place pan in cold oven on a lower shelf. On an uppershelf put an empty cookie tray to prevent the tops from burning.
Set oven to 450 and timer to 20 minutes.
After 20 minutes reduce to 350 and set timer again for 20 minutes.
Serve immediately! Really great with a tablespoon of reduced sugar orange marmalade or a little butter spray.
