Vegan Jambalaya

Ingredients
4 stalks celery (chopped)5 cloves garlic, pressed2 red/yellow or green bell peppers, chopped 3 vegan sausages sliced in rounds and halved1 cup white rice, uncooked1 can diced tomatoes, drained2 cups vegetable broth1 Tbsp Creole Seasoning (not listed above: see https://homecooking.about.com/od/spicerecipes/r/blspice14.htm to make your own)
Directions
In large pot heat oil, saute
Celery (chopped), garlic, bell peppers, chopped and vegan sausages sliced in rounds; cook until vegetables are softened

Add 1 cups rice, uncooked, tomatoes drained, vegetable broth and 1 Tbsp Creole Seasoning (not listed above: see https://homecooking.about.com/od/spicerecipes/r/blspice14.htm to make your own)

Cook 30 min until rice is soft

Salt & pepper to taste
