Mango-Melon Salsa

Ingredients
1 Lime1 Mango1 Cup Diced Cantaloupe2 Scallions, finely chopped1 Tbsp Chopped Cilantro1/8 Tsp PepperPinch Salt1 Tsp Rice Wine Vinegar
Directions
In bowl, grate lime zest. Cut away white pith; over bown, section lime. Halve sections. Pit, peel and chop mango; add to lime with remaining ingredients; toss. Cover.

Makes 8 1/4-cup servings. Serve as an accompaniment to fish, chicken or pork.
