Cream of Spinach Soup

Ingredients
Directions
Clarified Butter, garlic, carrots, celery, onions, flour, chicken broth, frozen spinach (or broccoli), and cream.
Saute garlic, onions, celery and carrots in clarified butter.
When vegetables are tender, stir in flour to absorb oil.
Add broth and return to a simmer. Thicken as desired with roux.
Stir in spinach (or broccoli) and heat.
Add cream (I used half and half) and heat until warm. Do not let soup boil at this point.
Yield: 6 cups 1 cup per serving
