2 lbs frozen broccoli spears3 cans fat-free, reduced sodium chicken broth1 small onion, grated1 small carrot, grated1 tsp garlic powder1 can Ro-tel Diced Tomatoes & Green Chiles2 tsp cornstarch12 oz. Velveeta Cheese Product (2% Milk), cubed
Mix chicken broth, broccoli, onion, carrot, tomatoes, and garlic powder together in a pot. Simmer for 25 minutes or until veggies are tender.
Puree about half of the soup mixture in a blender with cornstarch. Return to the pot and add cheese. Simmer until cheese is melted and soup has thickened, about 10 minutes.
