Fat Smash Tomato Lentil Stew For One

Ingredients
1/4 cup dry lentils1/2 cup of water PLUS (I ended up using 1 1/2 c. of water)2.5 oz diced tomatoes1 T. chopped onion1 celery stalk, diced1 garlic cloveSeason to taste
Directions
Chop celery and mince garlic.
Combine lentils and water. Bring to boil.
Lower heat to simmer, add tomatoes, onion , and celery.
Add 1/2 c. of hot water.
Cover and let simmer 45 mins. Check every 15 mins to stir, add water if necessary.
Add desired seasonings /spices.
