Black Bean Chicken Chili

Ingredients
1 TBSP Olive Oil1 Yellow Onion1 Green Bell Pepper1 Bunch Kale2 Cloves Garlic2 15.5 oz cans Black Beans1 cup low sodium chicken broth1 cup water1/2 small bunch of cilantro2 boneless chicken thighs (cooked and cut into small pieces)1 teaspoon white wine vinegar1/2 teaspoon cumin1 teaspoon mild chili powderpinch of cayenne3/4 teaspoon salt1/4 teaspoon black pepper
Directions
Sautee Vegetables and garlic until soft and translucent.
Add in beans, chicken, broth, water, vinegar, cilantro and seasonings. Simmer 12-15 minutes.
