2 Cups long grain brown rice cooked1 can chunck pineapple no sugar added1 TBSP Cornstarch1 TBSP Veg oil3 Chicken Breast skinless boneless cut into cubes2 large clove garlic minced1 med red bell pepper large diced1 yellow onion large diced1.5 cups snow peas havled 0.5 cup fat free chicken broth2 tablespoons lite soy sauce1 TBSP Hoisin sauce1/4 TBSP ground cinnamon1 TBSP ground ginger2 TBSP Honeysalt to taste
cook rice and set aside. drain pineapple setting aside juice. In a cup combine 1/4 cup juice and cornstarch. Mix til cornstarch is dissovled. Set aside. large skillet add garlic, oil and chicken. Brown for 5 minutes, add pepper, onion and ginger add snow peas, saute fro three minutes. add remaining pineapple juice, broth, soy sauce and hoisin sauce, cinnamon and homney. stir cook for another 5 mins or til chicken cooked threw. add pineapple and cornstarch mix until sauce thickens. serve over ric e.
