Nearly Vegetable Chili

Ingredients
Olive oil, onions, garlic, celery, carrots, mixed dried beans (reconstitute them first according to bag instructions!), mixed frozen vegetables, canned tomatoes, beef stock, BBWSB Macho Taco chili powder (can buy this at https://buzzspiceandbakery.com), tabasco, frozen spinach
Directions
Saute chopped onions, celery, carrots and garlic in olive oil until soft, add chili powder, beans, stock and tomatoes and bring to simmer. Cook for an hour and then add mixed frozen vegetables and spinach and cook for another hour.
