Crockpot Chicken ‘n Sweet Potato Chili

1 large onion, chopped2 medium red bell peppers cut into 1-inch chunks2 medium sweet potatoes, peeled and cut into 1-inch chunks2 cloves garlic, chopped1-2 jalapenos, diced (optional)2 pounds boneless skinless chicken breasts2 (28 ounce) cans diced tomatoes1 (15 ounce) can tomato sauce 2 (15 ounce) cans beans, rinsed and drained 1/4 cup reduced-sodium chicken broth1 1/2 to 2 tablespoons chili powder1 tablespoon cumin2 teaspoons dried oregano2 teaspoons dried parsleyCayenne to taste1/2 to 1 teaspoons sea salt (optional)1/8 teaspoon cinnamon2 teaspoons fresh lime juice
Place onions, peppers, sweet potatoes, garlic and jalapenos (optional) on bottom of crockpot. Top with chicken breasts.
Add remaining ingredients, stirring lightly to combine. Cover.
Cook on Low setting for about 6 to 7 hours or until chicken is completely cooked through.
Remove chicken breasts and shred with a fork. Return to crockpot and stir.
Reduce heat to “keep warm” until serving time.
