Rice Flour Bread

Ingredients
Directions
1 cup brown rice flour2 eggs1 tbsp baking powder1 tsp salt1 1/3 cups water
Preheat the oven to 350 degrees. Mix all the ingredients in a bowl until it's pretty smooth and lump-free. Pour it into a greased loaf pan and put it in the oven for 45 minutes.
Voila!
Make sure it's cooked all the way through by sticking a toothpick in; you want it to come out clean.
Since it doesn't actually rise, I had to cut mine in half and slice he separate halves sideways. I sliced it into sixths.

I LOVED this recipe! I've tried to make feasted breads before and they never came out right, but this one is so fluffy and airy.
I changed it to white rice flour and added 2 tablespoons of honey to sweeten it, and omitted the salt because it was a small batch (baking powder has a loud salt taste), - 6/3/15

Bit of a salty taste but possibly a personal thing. Might try to cut it back next time. Nice light texture - so easy to make. The preparation time is very mis-leading, took me 10mins at the most and that's including rummaging around in the cupboard. Might try a sweet version next time. - 2/10/14
