Chicken and Mushroom Stroganoff

Ingredients
4 Chicken breast halves, skinless2 T butter2 T flour1 medium Onion8 oz. mushrooms, quartered1 1/2 C Chicken Broth2 T yellow mustard1/2 C Sour Cream3 T Parsley, chopped2 C cooked Egg Noodles
Directions
1. Melt butter over high heat in a large non-stick pan.
2. Coat chicken in flour.
3. Brown chicken in melted butter on both sides.
4. Stir in onions, mushrooms, and any unused flour. Reduce heat to medium and cook, stirring, until onion is golden brown, about 5 minutes. In small bowl, whisk together chicken broth and mustard. Pour mixture into pan and stir. Bring to boil, reduce heat to simmer and cook about 5 minutes.
5.Stir in sour cream and parsley, simmer 2 minutes.
6. Season with salt and pepper to taste. Serve over egg noodles.
