Stuffed Peppers

Ingredients
2 Red Bell Peppers1/2 c. Mexican Mirepoix (frozen asset)1 c. Non-fat refried black beans (seasoned)1 c. cooked brown ricesprinkle of the cheeseMix it all together. Half and seed the red peppers. Portion out the filling, and bake at 425 for about 15 minutes.
Directions
Combine the filling and stuff the peppers. Easy peasy.
