Cheesy Zucchini Rounds

1 c. finely crushed cheese cracker crumbs1/4 tsp pepper1/2 tsp. garlic powder2 large egg whites2 medium zucchini, sliced into 1/4 inch thick rounds
Preheat oven to 475 degrees. Mist a baking sheet with cooking spray. In a shallow dish, combine cheese cracker crumbs, pepper and garlic powder. Beat egg whites in a separate shallow dish until foamy.
Dip zucchini pieces in eg whites, then toss in crumb mixture, turning to coat both sides. Arrange in a single layer on prepared baking sheet. Mist zucchini with cooking spray. Bake about 8 minutes; flip zucchini and mist with a little more cooking spray. Continue baking until goden and crispy, about 6 more minutes. Serve hot.
