Zucchini Frittata

Ingredients

1/3 cup chopped onion 1 clove garlic1 cup chopped zucchini1/4 cup chopped green pepperscooking spray1/4 cup Mexican cheddar cheese blendsalt, pepper, chili flakes to taste1 tbsp milk1 large egg
Preheat the oven to 400*F.
Spray a skillet with cooking spray.
Saute' the garlic, onion, pepper and zucchini in the skillet until tender.
In a separate bowl, beat the egg, salt, black pepper, red chili flakes and milk.
Add the sauteed vegetables and mix well.
Transfer to 10 oz baking dish.
Sprinkle with the cheese.
Bake at 400 degrees for 15-20 minutes or till the top is golden brown.
