Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb Zucchini, 2 cup, sliced Red Ripe Tomatoes, 3 medium whole (2-3/5" dia) Olive Oil, 3 tbsp.5 cup chopped onions3 cloves garlic, mincedSalt to tastePepper to taste1 tsp Thyme1/2 tsp dried basil3/4 cup water
Heat olive oil over medium heat. Add onions and sautee until translucent. Add garlic and sautee until fragrant. Add eggplant and zucchinni. Stir and sautee for two minutes. Add tomatoes, salt, pepper, thyme, and basil. Mix well. Add water, cover and simmer for 20 minutes. Serve as a side dish or over pasta.
