White bean and Kale Soup with Ham

Ingredients
2 tbsp - coconut oil2 lg. carrots - finely diced1 lg. onion - finely diced1 lg. red bell pepper - finely diced3 lg. stalks of celery - finely diced1 c. lean ham diced 5 c. kale - chopped3 c. cannelini beanssalt and pepper5 c. water
Directions
Put coconut oil in dutch oven, heat on medium. Chop 1st 4 ingredients and add to dutch oven. Cook until tender, stirring occasionally. In the meantime, chop ham and kale. Once tender, add ham, beans and water to vegetables. Bring to a boil then reduce to simmer for 45 minutes. Add kale and simmer for 15 minutes.
