Smoky Tofu Banh Mi

Ingredients
Sub Sandwich RollTofu, firm 2 slicesEggplant, 1 slice, cubedPortabella Mushrooms, sliced, 1/2 cupCabbage, fresh, .25 cup, choppedSoy Sauce, 2 tbspLiquid Smoke, 5 dropsWorcestershire Sauce, 1/2 tspVegetable Oil, 1 tbspGoat Cheese, 1/2 ozHoney, 1/2 tbsp
Directions
Slice tofu about 1/4 in thick on the shorter side. Slice eggplant about 1/2 in thick. Place tofu, eggplant, mushrooms, soy sauce, liquid smoke and worcestershire sauce in a shallow dish to coat all ingredients. Fry in oil until tofu is browned on both sides and vegetables soften, about 5-10 minutes. Drain on paper towel.

Spread goat cheese on one side of the bread, drizzle honey, top with cabbage, tofu and vegetables.
