Blackeyed Pea Salad

1.66 cup blackeyed peas no salt added, drained and rinsed.50 onion finely chopped.50 cup mixed bell peppers finely chopped1 mini cucumber finely chopped1 medium tomato seeded and finely chopped3 tbsp olive oil1 tbsp any flavor balsamic vinegar
1. Drain and rinse blackeyed peas. Place in bowl large to mix in.
2. Chop vegetables and add to bowl.
3. Add olive oil and vinegar.
4. Mix everything together, season to taste (not included in nutritional values).
5. Place in fridge for several hours to allow all flavors to marry.
Serving Size: Makes approx 6 1/2 cup servings
