Mom William's Meatloaf: A Low-Carb Makeover

Ground beef, lean, 1lb.Low Carb, High Fiber Bread, 2 Slices (Oroweat Double Fiber Bread)Heavy Whipping Cream, 2 tbspEgg, fresh, 1 largeSalt, 1 tspSage, ground, 1/2 tsp*Yellow Onion, chopped - 1/2 cupPepper, black, 1/4 tsp
Break bread into small pieces. Mix together all ingredients (mix with a spoon and NOT your hands for a course texture). Make loaf in greased pan. (My 8x11 glass pan works pretty well.) Bake at 350 degrees for 1 hour.
Spoon even portions into 12 muffin cups and bake for about 25 minutes, if you would like to freeze smaller portions to take to work. 2 muffin loafs for one serving.
