Olive Oil 2 tbsp1 small onion chopped1 small stalk of celery chopped1 small carrot, chopped1 small yellow or green zucchini, chopped4 fresh plum tomatoes, chopped1 cup dried French green lentils, sorted and rinsed4 cups of vegetable stock2 springs of fresh thyme1 bay leafMrs. Dash table blend .25 tsp
Heat the olive oil in a heavy saucepan or Dutch oven. Add the onion, celery, and carrot and cook over medium heat for 5 minutes, stirring frequently. Add the zucchini and tomato and cook for 5 more minutes. Add the lentils, stock, thyme and bay leaf, season well with Mrs. Dash. Cook at a slow boil for 20-25 minutes or until the lentils are tender. Adjust seasoning to taste.
