2 1/2 cups organic soy flour2 Tbsp + 1/2 tsp baking powder1 tsp xylitol1/2 tsp salt1 cup egg substitute1 1/2 cups skim milk2 cups Almond Breeze Vanilla Unsweetened Almond Milk2/3 cup water4 Tbsp melted butterTopping8 Tbsp Joseph's Sugar Free Maple Syrup
1. In a large bowl, stir together the flour, baking powder, xylitol, and salt. In a medium bowl, whisk together egg substitute, almond milk and water until blended.
2. Make a well in the center of the dry ingredients. Pour the wet ingredients into the well and stir until combined. Blend in 4 Tbsp of melted butter.
3. Heat a large non-stick skillet over medium heat. Pour 1/3 cup of the batter out per pancake and cook until bubbles form and pop on top of each pancake. Flip over and cook about 45 seconds more. Repeat until the batter is gone.
4. Serve a stack of 4 pancakes topped with 2 Tbps of the sugar-free syrup.
