Chicken and Wild Rice Stew

Ingredients
1 1/2 lbs boneless, skinless chicken breast2 celery stalks, chopped1 large onion, chopped2 tbsp chopped garlic4 chicken bouillon cubes1 bay leaf1 cup uncooked wild rice26 oz package of frozen mixed vegetables10 cups water
Directions
Sear chicken breasts lightly and allow to cool. Chop chicken into cubes and place in a large soup pot. Add water and bring to a boil, then add all other ingredients. Simmer for 45 minutes, or until rice and chicken are fully cooked.
