Chick Pea Curry

Ingredients
Chickpeas (garbanzo beans), 3 cup (canned or 1.5 C. Dry and soaked for 24 hrs.)Olive Oil, 1 tbsp Canola Oil, 1 tbspCumin seed, 2 tspCurry powder, 2 tsp Turmeric, ground, 1 tspGinger Root, 2 tspOnions, raw, 1 medium (2-1/2" dia) Garlic, 2 cloveRed Ripe Tomatoes, 2
Directions
1. Heat oils in large saucepan over med. heat.
2. add cumin seed, curry, turmeric, ginger root, onions and garlic. Cook until fragrant.
3. add tomato and chick peas.
4. Turn heat down to low and cook covered for about 30 min.
Serve over rice.
