Quinoa with Cranberries and Carrots

1 ts olive oil1/4 cup sliced green onions (scallions)1/2 ts curry powder1 cup vegetable broth1/2 cup quinoa, rinsed and drained1/4 ts sea salt1 cup grated carrot1/4 cup dried cranberries, coarsely chopped1/2 ts grated orange peel2 TB minced fresh parsley
Heat oil in saucepan over medium heat and saute onion 2 minutes, until soft. Add curry powder and saute 30 seconds. Add broth, quinoa and salt. Bring to a boil, reduce heat to lo, cover and simmer 15-20 minutes, until water is absorbed and the quinoa is lucent. Turn off heat. Add remaining ingredients. Cover and let stand 3 minutes before serving.
