Baked Macaroni and Cheese

Ingredients
2 cups cooked macaroni (not 2 cups dry)1 TBSP flour1 TBSP olive oil1 cup almond milk2 oz reduced fat cheddar2 slices reduced fat swiss1/2 c. cottage cheese
Directions
cook macaroni per directions, set aside
brown flour in olive oil
add milk
simmer till thickened
add cheeses (you may whisk the cottage cheese to reduce lumps before adding cheddar and swiss)
pour over elbows
place in 400* oven till edges brown lightly
