Orange Roughy with Avocado-Tomato Salsa

Near East Long Grain & Wild Grain rice12 oz of Orange Roughy1 diced small tomato1 diced avocado4 tbsp of fresh chopped cilantro1/2 of a small freshly squeezed lemon1 tsp salt1 tsp pepper
Preheat oven to 450. Prepare wild grain rice according to box instructions. Spray cooking dish with canola cooking spray. Rinse fish and pat dry. Season both side of fish with side and pepper. Place fish in dish and cook for 6 to 9 minutes on each side.
For salsa combine in bowl a dIced small tomato, diced avocado, 4 tbsp of fresh chopped cilantro, 1/2 of a small freshly squeezed lemon, and a dash of salt.
Serve fish over rice and top with salsa.
