500 gr Peameal Bacon cured and rolled in cornmeal1 Can Unico Chickpeas - drained and rinsed1 Can DelMonte tomatoes in chunks1 large green bell pepper1 large onion - chopped2 tbsp Grace Jamaican Jerk MarinadeCajun spice , to taste
1. Season pork with with salt and pepper, and place in a sprayed crock pot.
2. In a large bowl, mix together the rest of the ingredients. Add to the crockpot.
3. Cover and cook on high for 3 - 4 hours or on low for 7 - 8 hours.
MAKES 5 SERVINGS
Serving Size: 5 servings (1.5 C of veggies and 100gr of meat)
