Spiced Oat Pancakes

1 1/2 cups all-purpose flour1 cup oat flour or ground oatmeal3 tbsp. brown sugar1 tbsp. baking powder1 tsp. salt1/2 tsp. cinnamon1/4 tsp. nutmeg1/2 cup egg substitute2 cups skim milk2 tbsp. butter, melted
Combine flour, oat flour, brown sugar, baking powder, salt, cinnamon, and nutmeg in a large bowl.
In another bowl, whisk together milk, egg substitute, and butter. Pour into flour mixture and whisk to combine.
Heat the skillet or griddle over medium-high heat. Lightly coat pan with non-stick cooking spray. Drop batter, 1/2 cup at a time, on griddle, with plenty of space for spreading. Fry until bubbles form and break on the pancake's surface and the bottom is browned. Flip and cook just until done, about 1 minute more.
