Edith's Unorthodox Stuffing

1 tsp olive oil1 cup chopped onions2.5 cups chopped carrots2.5 cups chopped celery2 ounces of raisins (about 1/3 of a cup)1 cup vegetable or chicken stock (or bouillon)
Saute chopped onions in 1 tsp olive oil until slightly translucent. Added remaining vegetables and the raisins plus vegetable or chicken stock (or bouillon powder and water. The liquid should NOT cover the vegetables.
Bring to a boil then reduce heat and cover. Simmer 20-30 minutes, stirring occasionally until the vegetables are soft and the raisins are plump.
Makes 5 servings of 3/4 cup each.
