Buttermilk waffles

Ingredients
2 cups all-purpose flour2 tablespoons sugar2 teaspoons baking powder1 teaspoon baking soda1/2 teaspoon salt2 eggs2 cups buttermilk or 2 cups of plain yogurt1/2 cup milk1/4 cup butter, melted
Directions
In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, lightly beat the eggs, buttermilk/yogurt, milk, and butter. Add the liquid ingredients to the dry ingredients all at once, stirring just to blend. The batter should be slightly lumpy and quite thick. let the batter rest for 5 to 10 minutes. Cook as you would any other waffle. Makes 8 waffles
(The nutritional information was calculated with slightly different ingredients. I used 3 egg whites instead of 2 whole eggs, nonfat plain yogurt instead of buttermilk, oat milk instead of regular milk, and only 3 tablespoons of butter. Both ways are great tasting.)
Don't want to get out you waffle iron, these make great pancakes to.
