CHICKEN PROVENCALE

Ingredients
2 tsp olive oil1-1/2 lb chicken breasts2 cups sliced mushrooms2 medium tomatoes, chopped2 cups sliced green or red bell peppers1 cup sliced onion1 tsp fresh minced garlic1 tsp oregano leavesSalt and Pepper to taste4 tsp white wine
Directions
Heat oil in non-stick skillet; add chicken parts and saute until lightly browned. Remove chicken and set aside. In same pan saute all vegetables with garlic until tender. Add oregano, salt, and pepper. Arrange chicken and vegetables in small casserole, add wine. Bake at 375F for 25 minutes.
