Gluten and Dairy free chocolate chip cookies

Ingredients
1/4 cup light olive oil1/4 cup coconut crystals1 small egg1/2 tsp vanilla3/4 cup Pamela's Ultimate Baking and Pancake mix, gluten free3/4 cup semi-sweet chocolate chips, Enjoy Life dairy, soy and nut free
Directions
Pre-heat oven to 350. Mix oil, coconut crystals, vanilla and egg. Add Pamela's mix and chocolate chips, mix thoroughly. Add extra flour to thicken if the mix is too sticky. Drop onto greased cookie sheet or parchment paper. Bake 10-15 minutes until lightly browned. Let cool slightly and remove from cookie sheet.
