key Lime White Chocolate Chip Cheesecake

Ingredients
Graham Cracker Crust Ingredients:1-1/2 cup graham cracker crumbs4 tbsp apple juice1/4 cup unsalted butterFilling Ingredients:3 bricks (8 0z each) fat-free cream cheese1 brick (8 oz) 1/3 less fat cream cheese8 packets Splenda1/2 cup Sugar in the Raw2 eggs1/2 cup Eggbeaters2 oz pure vanilla extract1/4 cup flour6 oz low fat sour cream3/4 cup key lime juice4 oz white chocolate chips
Directions
First remove cream cheese and eggs from the fridge and allow to warm to room temperature.

Make the crust
Melt the butter, combine all ingredients until well blended. Press into the bottom of a 9" springform pan. Cook at 350 degrees for 8 minutes. Remove from oven and allow to cool

Using a mixer on medium speed, whip the cream cheese until smooth.
Add the spenda packets and sugar slowly as you mix.
Add the eggs one at a time (half of the eggbeaters at a time as well). Mix thoroughly.
Add vanilla extract, flour, and key lime juice. Mix well.
Add the sour cream last, and mix until smooth.
Fold in the white chocolate chips just before pouring into the springform pan.
Cook at 325 for 1hour 15 minutes. (You should have an additional pan of water in the oven to help prevent cracking). The cake is complete when the center is just firm.
Turn off the oven and leave in the oven for 1 hour to cool (leave the oven door open just a bit.
Allow to finish cooling at room temperature before putting into the fridge overnight.
