Crock Pot Potato and Canadian Bacon Chowder

2 c. potatoes, cut into 1/2 inch cubes1 lg. carrot, diced1 c. leeks, chopped, white part only1 garlic clove, minced4 c. FF chicken broth4 oz. canadian-style bacon (cooked)1/2 c. uncooked barley, pearl1 tsp. bay leaf, crushed1/4 tsp ground thyme1/4 tsp. black pepper1/2 c. FF evaporated milk2 fl oz. FF half and half
In a slow cooker, combine potatoes, carrots, leek, garlic, broth, barley, bay leaf, thyme, pepper and bacon. Cover and cook on low for 6 ours or until vegetables and barley are tender.
Stir in evaporated milk and half and half and heat through uncovered, about 10 minutes.
Yields 8 - 1 1/4 cups per serving.

GIGIDISAPPEARED
I fixed this & my family couldn't even eat it. I'm not sure if there was too much thyme or whether it was the bay leaves, but it did't quite taste right. It might be better if you didn't put the bay leaves or thyme. I may try to fix it again without them & see how it tastes. - 1/11/10
