Ingredients
Directions
2 cups Chicken Breast, no skin, cooked, cubed1 Gala Apple, sliced and chopped1 cup Red Seedless Grapes, halved or quartered1/2 cup Cranberries, dried, sweetened (Craisins)1 Orange, peeled, sectioned and chopped3/4 cup (12 Tbsp) Hellman's Light Mayonnaise
Cook and cube chicken breasts until you have 2 cups. (Can use leftovers or cook up lots at once and cube it then freeze it in 2 cup bags)
Chop all fruits. Mix chicken and fruit together with mayo and left it sit in refrig to get chilled.
I used Moro blood orange which has a nice red color so with the grapes, red oranges and craisins it was very festive looking!
Serving size here is 1/2 cup. (not sure what it should be but figure the recipe makes about 5 cups of chicken salad)
