Baked Veggie Quinoa

Ingredients
4 garlic cloves, chopped1 butternut squash, about 3 pounds in weight, peeled and cut into 1/2 inch cubes1 cup quinoa1 1/2 cup kale (approximately)2 tablespoons apple cider wine vinegar1 teaspoon basil1/2 teaspoons thyme, dried1 tsp parsley, dried 1/4 cup vegetable brothSalt/pepper to taste
Directions
Preheat oven to 375 degrees Fahrenheit.
Add all ingredients to a deep baking pan, mixing together well and place in oven for 30- minutes, stirring at the 15 minute mark and reduce heat to 325. Bake covered the remaining time.
