Roasted Balsamic Vegetables

Ingredients
1 yellow squash, cut into thick strips1 green pepper, cut into strips2 cups fresh green beans, ends snapped1 large onion, cut into chunks12-15 baby carrots12-15 cherry or grape tomatoes1 tbsp extra virgin olive oil3 tbsp balsamic vinegar1 tsp coarse salt
Directions
Place all vegetables in a shallow baking pan lined with non-stick foil. Drizzle with olive oil and sprinkle with salt; stir to coat. Drizzle vinegar over vegetables.

Cover with foil and roast at 400 degrees 35-45 minutes (remove foil last 5-10 minutes).
