Spinach Pasta Chicken Salad

Ingredients
8 cups spinach1 lb bowtie pasta, cooked3 cups cooked shredded chicken1/4 cup toasted sesame seeds (optional)1/4 cup chopped flat leaf parsley (optional)1/2 cup chopped green onions (2 onions)Dressing:1/4 cup olive oil2/3 cup rice vinegar3 Tbs sugar1/2 tsp salt1/4 tsp pepper1/8 cup soy sauce
Directions
Mix 1/2 to 2/3 cup of dressing with pasta and chicken. Chicken and pasta can be cooked the night before and soaked in dressing overnight if desired. When ready to serve, mix remaining ingredients with dressing and combine with chicken and pasta. Best served when chilled.
