Ingredients
1 egg2 egg whiteshandful of loose leaf frozen spinachlittle scoop of onionlittle scoop of red pepperslittle scoop of green peppers1 c. grapes or other fruit on hand1/4 c. salsa
Directions
Makes 1 serving.

In a small bowl, whisk the eggs together, add salt/pepper if desired.
Spray your cooking pan with cooking spray. Add directly to the pan as you pull them out - spinach, onion, peppers. And saute then until thawed and a little wilty. Add eggs to the pan and scramble to desired doneness.
To serve, put on a small plate with a mound of grapes, and then pour salsa over the eggs. Delish!
