Quinoa & Black Bean Salad

1.5 cups quinoa, dried and cooked according to package2 cans black beans, rinsed and drained3 cups frozen corn1 red pepper, diced1 red onion, diced1 cup grape/cherry tomoatescilantro or parsley, minced2 limes, juiced2 tbsp olive oil1 jalapeno, deseeded and mincedsalt/pepper/garlic/cumin/chili powder to taste
cook quinoa according to package, let cool. Mix together spices, lime juice and olive oil. Blend well. Add all other ingredients, including cooled quinoa together in large bowl. Pour lime juice mixture over the top and stir to coat. Let sit overnight so flavors blend. Serve cold.
