Pasta with 'sausage' and mushrooms

Ingredients
1 med. tomato, chopped 1 tsp Extra Virgin Olive Oil3 cloves garlic, minced or pressed2 Tbl. fresh basil, chiffonade (or 1 tsp. dried)1 Tbl. grated parmesan cheese3 links Boca Italian "sausage", sliced2 cups fresh mushrooms,sliced1 tsp Canola oil plus 1 1/2 tsp. Smart Balance Lite7 ounces Ronzoni Healthy Taste pasta
Directions
In a non-reactive bowl, combine tomato, olive oil, garlic, basil and parmesan. Cover with plastic wrap and allow to sit at room temperature for at least one hour.

Bring a largish pot of lightly salted water to the boil. Add pasta, stir, and cook at the simmer for 14 minutes, stirring occasionally. Drain.

Meanwhile, - In a large non-stick skillet, cook Boca "sausage" and mushrooms in Canola oil and Smart Balance until mushrooms are soft and the mixture is fragrant, around 5 to 6 minutes.

Combine all the above and serve. Delish!

A simple salad of lettuces is perfect with this.
