2 cups chopped Kale, hard stems removed1 14 oz can diced tomatoes with juice1 tsp chopped garlic from a jar1 med. onion, chopped1 tbsp olive oil2 tsp italian seasoning 1/2 tsp black pepper
sautee onion and garlic in a large non-stick pan over medium heat with olive oil for 3-4 minutes, until onion starts to soften and garlic is fragrant. Add remaining ingredients (without draining the tomatoes) and cover pan. Stir occasionally, and continue cooking over medium heat until kale is wilted and all ingredients are hot.
Makes enough to top four servings of whole wheat pasta or rice.
