Elvie's Creamy Carrot Soup

1T olive oil2 large onions, chopped1T ground cumin2lbs carrots, peeled and sliced1lb potatoes, peeled and diced6C no-salt chicken broth, fat skimmed off top (sub vegetable broth for vegetarian recipe)2C skim milk, hot2T fresh lime juice2tsp grated lime peelsalt and freshly ground pepper, to tastenon-fat plain yogurt and lime slices as garnish
In a large saucepan, heat oil over low heat.
Add onions and cook 4-5 minutes until softened.
Add cumin and cook 1 minute.
Add carrots, potatoes, and chicken broth; bring to a boil.
Reduce heat and simmer 25-35 minutes, until vegetables are soft, stirring occasionally.
Process vegetables in food processor until smooth. Return to saucepan, heat over low heat, gradually stirring in hot milk.
Add lime juice, lime peel, salt and pepper.
Ladle soup into bowls and garnish with yogurt and lime slices.
