Vegan Lentil Stew with Veggie Patty

Ingredients
Onions, raw, 1 medium, choppedCarrots, raw, 1 large, choppedShallots, 1 tbsp chopped, finely chopped*Potato, raw, 1 large (3" to 4-1/4" dia.), dicedOlive Oil, 1 tbspVegetable Broth, 4 cupLentils, 1 cupMorningstar Farms Breakfast Patties, 6 patties
Directions
Saute onions, carrots and shallot in oil on med-high heat until soft and fragrant. Add vegetable broth, bring to a boil, add potato and lentils. Simmer covered 20 min. Microwave patties, then slice into bite size pieces. Add patties to soup, simmer a few minutes more, then serve.
