Quinoa & Orzo Pilaf with Mixed Veggies

1/2 cup dry quinoa1/2 cup uncooked orzo1 can reduced sodium chicken broth1 cup water6 ounces frozen mixed veggies1 tbsp extra virgin olive oilwedge of lemon
In a rice cooker (or over the stove) combine quinoa, orzo, chicken broth and water. Cook until all liquid is boiled away, and the orzo/quinoa mixture is cooked and sticky.
Meanwhile, heat 1 tbsp of extra virgin olive oil in a saute pan over medium high heat. When the oil is hot enough, toss in the frozen vegetables and stir fry, about 5-8 minutes. Toss quinoa/orzo mixture with the cooked vegetables, with the juice from a wedge of lemon.
Serve hot (great with Greek Chicken, pictured)
