Strawberry Coconut Flour Muffins

Ingredients
6 eggs0.25 Canola oil0.25 cup non-fat milk6 Tbsp honey0.5 tsp salt0.5 tsp vanilla4 packets of True Lemon (crystallized lemon)0.5 cup coconut flour0.5 tsp baking powder1.5 cup fresh strawberries, sliced
Directions
preheat oven to 400 degrees.

Spray muffin tins lightly with non-stick spray.

Mix together eggs, oil, milk, honey, salt, vanilla, & true lemon. Add coconut flour & baking powder and mix until there are no lumps. Fold in the strawberries.

Divide among 18 muffin tins (I use silicone without wrappers and they are fine).

Bake for 15 -20 minutes until done.
