Chicken Salad

1 can chicken breast meat in water, drained1/4 cup diced red onion1/4 cup diced celery1/2 cup parsley, chopped3 T light canola mayonnaise1 T red or white wine vinegar
Directions
In a medium-sized bowl, mix all ingredients together. Serve either as a salad or in a sandwich.
