1.5 slices day-old bread, crusts removedwater for soaking bread1/2 medium apple100 grams blanched marcona almonds2 medium peeled garlic cloves, core removed300 ml water5 T extra virgin olive oil1.5 T sherry vinegar1 cup seedless grapes, sliced in half and frozensalt
Soak the bread in water for 10 minutes, then squeeze out excess water.
Grind the almonds in a food processor.
Add half of the apple, garlic and bread to the almonds and process until it forms a paste. Slowly add the water, vinegar and olive oil. At the end, add the other half of the apple and leave somewhat chunky for texture.
Season to taste, chill for at least 2 hours. Serve with the frozen grapes on top.
Serving Size: 6 servings
